Banana Bread Loaf

This Banana Bread Loaf celebrates simple baking with quality ingredients from Nicolas Vahé. Moist, rich, and infused with warm cardamom, dark chocolate, and crunchy walnuts, it's a comforting loaf that's just as perfect for a slow breakfast as it is for an afternoon coffee break.

• 3 bananas (about 350 g)
 • 100 g Nicolas Vahé Olive Oil
 • 100 g soft brown sugar
 • 3 eggs
 • 175 g plain flour
 • 1 tsp baking powder
 • 2 tsp ground cardamom
 • 1 tsp Nicolas Vahé Sea Salt
 • 50 g walnuts, roughly chopped
 • 100 g dark chocolate, chopped
 • 1 banana (for topping)

Method

Preheat the oven to 200°C.

Mash the bananas thoroughly and whisk them together with the olive oil, brown sugar, and eggs in a bowl until light and airy.

In a separate bowl, combine the flour, baking powder, cardamom, salt, and roughly chopped walnuts.

Fold the wet ingredients into the dry ingredients and mix until well combined.

Finally, fold in the dark chocolate. Slice the remaining banana lengthways and arrange it on top of the batter.

Pour the batter into a greased 1-litre loaf tin and bake in the preheated oven for approximately 45 minutes.

Allow the banana bread to cool completely before slicing and serving.
