Fluffy Omelette with Bruschetta

A soft and fluffy omelette topped with Nicolas Vahé Bruschetta Tomato & Garlic and Everyday Mix. Served with fresh sourdough for a simple breakfast or light lunch.

  • 3 eggs
  • 1 tbsp butter, for frying
  • Nicolas Vahé Everyday Mix, to taste
  • 1–2 tbsp Nicolas Vahé Bruschetta Tomato & Garlic
  • Fresh chives, finely chopped

 To Serve
 • Sourdough bread

Method

Crack the eggs into a bowl and whisk lightly until combined. Heat the butter in a frying pan over medium heat, preferably a non-stick pan.

Once the butter has melted, pour in the eggs. Using a spatula, gently stir the eggs while drawing the mixture in from the edges of the pan. Continue until the eggs begin to set. Stop stirring and allow the omelette to cook for about 1 minute more.The surface should remain soft and slightly creamy rather than fully cooked through.

Spread 1–2 tablespoons of Nicolas Vahé Bruschetta Tomato & Garlic over the omelette and season with Nicolas Vahé Everyday Mix.

Carefully roll the omelette into shape and transfer it to a serving plate.

Top with an extra spoonful of Nicolas Vahé Bruschetta Tomato & Garlic, a sprinkling of chopped chives, and a little more seasoning if desired.

Serve immediately with slices of fresh sourdough bread.
